Favourite Recipes of 2015

I’m always trying to find super easy recipes, not just for Khai and I, but for when we have many mouths to feed. Here are my favourite recipe discoveries for 2015:

Nigella’s Nutella Cheesecake
I ate a slice of this for breakfast on Christmas Day. No, I’m not lying. This cheesecake is so delicious I can’t resist any time of the day. I’ve made it a couple of times this year, and it’s gone down an absolute treat. Be aware, the recipe requires a precise 400g jar of Nutella, so there's no room for extra spoonfuls for the chef :-(

Leek and Cream Cheese Salmon Parcels
I heard one of the hosts of The Great Australian Bake-Off say “if you wrapped cardboard in pastry, I’d still eat it”. Don’t joke, as this could be true for me. I’m not the hugest fan of salmon, but pair it with pastry and you’ve got a winner.

Faux In-N-Out Burgers
It’s been almost 2 years since we left the States and although Khai got his In-N-Out fix earlier in the year at a Sydney pop-up, I’ve been left craving. Two years of craving means you resort to some pretty drastic measures – like trying to make your own. These copycat burgers aren’t the real thing, but they’ll do until we can get our hands on one of those deliciously squishy creations. PS. If anyone knows where to get good burger buns in Sydney LET ME KNOW!

Cheesecake Brownies
Again, chocolate and cheesecake – can you sense a theme? These are, quite frankly, the EASIEST thing you can take to a party and guarantee there aren’t any leftovers. The recipe is in a handy video, too!

Italian Sausage and Broccolini Pasta
Khai came home from a work lunch telling me that he’d had the BEST pasta EVER, and that one day he’d cook it for me. That day never came, but I’ve made it for him about 10 times this year. We sorta made the recipe up, but this one is as close to what we do at home. Suggestion: use bucatini (tubular spaghetti)… delicious!!

Blender Oat Double Choc Cake
We had this at a friend’s place, I requested the recipe, and then proceeded to make it about 3 times in the following weeks. It tastes so deliciously wholesome, and is so darned easy. You can also make it in muffin tins for an easy brekky or snack.
